Tong Mu Guan - Jin Jun Mei Tea (桐木关 - 金骏眉)

Black Tea is a fully oxidized tea. The process is halted by exposing the leaves to heat at a desired level of oxidation and making such a tea that is robust and rich in flavour. In China, black tea is known as "red tea" due to the Reddish colour of the tea liquor. Black tea was the first type of tea to be introduced to Europe and the Middle East. Through the centuries, a variety of techniques for processing tea and several different types of Black tea were developed. These many different tea types in the Black Tea family from different regions are known for producing black tea with a unique characteristic aroma. Black Tea has more tannins than other type of tea and contains many antioxidants and polyphenols that are associated with several health benefits.

Description
Jin Jun Mei is a Chinese black tea, produced in Tong mu guan, in Tong mu village in Wuyi Mountain Fujian Province. Tong mu guan is famous for tea production areas, due to its high terrain and heavy forest coverage, which is a superior growth environment for these tea trees. Jin Jun Mei belongs to the branch of the Lapsang Souchong tea which is a new kind of black tea developed in 2005. Jin Jun Mei the tea twist shape body is with an abundance of gold tips. The aroma is pure and rich, it has a lingering taste of honey and the liquor is extremely smooth.

Water Temperature: 95-100°c
Ratio of Tea Leaf &Water: 1g to 30ml
Steeping:
1-3 (10 to 15sec)
4-5 (20 to 25sec)
Infusion: 5 to 7 times
